I got the inspiration for these cookies from wanting to make that $250 cookie recipe but I needed to use up an aging banana and banana chips. So, I combined a few cookie recipes I have and … Voila!
$500 PB Banana Chip Cookies
1/2 c Butter
1/2 c Peanut Butter
1 c Sugar
2/3 c Brown Sugar
1 Banana - mashed
1 dash Vanilla
2 Eggs
1 c ground Oatmeal ( I used quick cooking because it's all I had and I ground the Oatmeal in my blender)
1 1/2 c Flour
1/2 c Whole Wheat Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 c Chocolate Chips
1/2 c Banana Chips- chopped
1/2 of a Chocolate Bar -chopped (I used 85% Dark- Carpe Noctem ;)
Cream butter, PB and sugars until well blended.
Add eggs, banana and vanilla. Mix well
Combine Flours, Oatmeal, Powder, Soda & Salt in separate bowl. Mix into dough.
Stir in chocolate and chips.
Drop rounded spoonfuls onto a cookie pan or baking stone and cook 8-10 minutes in a 375ยบ oven.
Makes about 4 dozen depending on size. (It's hard to count when you eat them whale your still cooking ;)
After Notes::
Needs more butter, maybe 2/3 c---they are too cake-like.
Dark Chocolate bar should have been grated not chopped.
(Maybe I should have called them the $125 PB Banana Chip Cookie... ; )
